Diamond is one of the best-selling products in our offer. It is an easy drinking coffee for anyone who is not looking for intense fruity flavours in a cup and prefers to enjoy a balanced sweet taste with mostly chocolate and nutty notes. We also recommend Diamond to customers who are just starting out with specialty coffees and don’t want to go straight to lighter roast coffees. It is also ideal for the gastro segment, where it is more challenging to adapt to the full range of customer taste preferences.
Farm / Processing Station:
It is a blend of quality coffees collected from all over the famous Minas Gerais region. As it is a mix of lots from different farms, Diamond is on the borderline of specialty coffee. However, the quality of the beans and the taste do qualify for this description. It achieves NY2 quality, which allows only a very small amount of defects. The coffee is a 17/18 size – the second largest you can buy from Brazil. It is therefore a very high quality Arabica, more conservative in taste, which we roast a little more than our other coffees. This makes the coffee suitable for classic espresso and can also be used in home or office machines.
Variety:
Diamond is a mixture of different varieties. The resulting blend is well balanced with a neutral and smooth profile that works great on an individual basis or as a base for blends.
Processing:
After harvesting, the cherries are moved to concrete platforms where they dry for about 20 days with frequent turns.
Our baristas notes:
Very simple, stable espresso to set up. We got the best results with a 1 : 2 ratio of around 32 seconds. The espresso has low acidity, high sweetness and a full medium body with a strong aftertaste. The flavour is dominated by notes of chocolate, raisins and hazelnut . We have used the same recipe to the milk and the coffee came out beautifully full with a nutella-like flavour.
For automatic coffee machines, we recommend using the “automatic” roasting, where the sweetness of the coffee stands out more even with the lower pressure of the machine. We recommend setting the grind to almost the finest variant.
