This beautiful coffee is grown on Evelin’s Finca La Espreanza. He has lived there with his family for 18 years, of which he has been involved in micro lots with selective coffee care for 14 years. They pay close attention to every bean. During the ongoing harvest, they walk through the farm with their family and co-workers every 8 days, picking just-ripe cherries. After harvesting, the fruits are sorted and in this version of the processing, the washing process begins with fermentation for 12-16 hours. After washing, the clean grain is moved to a drying tent, where the whole process of final drying takes about 8-14 days.
