We would like to introduce you our first coffee from Mexico. It comes from the family farm Finca Fatima in Coatepec. Owner Ernesto Perez and his sister Givette Perez Orea oversee the growing and processing of the coffee on the farm. In 2023, they expanded their operations by purchasing a new farm called Finca La Perla.
We bought a lot of the Marsellesa variety. At an altitude of 1,250 metres above sea level Finca Fatima is threatened by coffee leaf rust and other diseases and pests. One of the tactics Ernesto and Givette use is to plant varieties resistant to coffee rust such as Garnica and Marsellesa. With careful cultivation and processing these trees still have tremendous quality potential. Carefull processing at Finca Fatima ensures high quality profiles from these trees.
Ripe red cherries are hand-picked and processed directly on the Finca Fatima farm. The cherries are first floated to remove any imperfections. Then they are dried in small drying ovens called Guardiola at low temperatures.
You can enjoy a very sweet coffee with notes of red apple, dates and honey on the body and a pleasant aftertaste reminiscent of rum praline.
Marsellesa variety:
Marsellesa is a hybrid variety from the Sarchimor family. The Sarchimor plants are a cross between the Villa Sarchi variety (a natural mutation of the Bourbon variety, as well as the Caturra and Pacas varieties) and a coffee rust resistant hybrid from East Timor. Marsellesa is a good combination of the flavour profile of the Bourbon variety and the resistance of the disease-resistant hybrid from Timor-Leste.
